Olive oil that has a late harvest date will taste less strong than olive oil that has a more recent harvest date.Light and extra-light olive oil could be used, but then it is defeating the purpose of introducing optimal amounts of healthy fats and nutrients due to light and extra-light olive oil’s processed nature.”

Sexenian says, “Another great benefit of baking with olive oil in place of butter is that your baked goods will last longer! Olive oil is rich in vitamin E, which naturally preserves baked goods by keeping them moist.” She adds, “The amount of olive oil you need to use in a recipe turns out to be less than the amount of butter you need to use. For example, if a recipe calls for one cup of butter, you would only need a three-quarter cup of olive oil.”
